Mekong River moss grows when the water level drops and light reaches the riverbed in the dry season. Around that time, the normally muddy water of the Mekong River becomes more transparent. The river moss, called kai, is a specialty of Luang Pabang and is used as an ingredient in local cuisine. Since Luang Pabang became a World Heritage site, dried moss, made in thin sheets like seaweed in Japan and Korea, has been produced for the rapidly increasing number of tourists. Tools originally used for making paper are employed for this process. Before drying, sesame seeds, thinly sliced tomato and garlic are placed on the moss sheets.
In 2009, villagers said that the amount of moss in the Mekong River was decreasing sharply. This is because river moss is washed away by the discharge of water from Chinese dams upstream. The villagers were purchasing moss from other rivers, such as those in Xiangkhouang Province, but the moss from the Mekong River is said to be more delicious.
Impacts of the construction of dams on the mainstream Mekong River became much more obvious from around that time.
